By Cucumber Salad, No. 1
2 cucumbers, French dressing.
Pare and slice the cucumbers very thin, throw them into cold water for one hour, drain and dry. When ready to serve put them into a salad bowl and pour over them a French dressing.
Cucumber Salad, No. 2
2 cucumbers, 4 large tomatoes, French dressing, boiled dressing. (Ed. note: the recipe for boiled dressing was not included in this cookbook, so I am providing a link to another site.)
Peel and cut the cucumbers into 1/4" slices. Soak in the water. Scald and peel the tomatoes. Cut them in halves and remove the seeds. Drain and cut the cucumbers in small dice, macerate them with a French dressing. Put them into the cavities, and, when ready to serve, put a spoonful of boiled dressing on each.
Salsify in Salads
Cold boiled salsify makes a pleasant salad when mixed with French dressing. It is also nice when combined in a salad with other cooked vegetables like potatoes, carrots, beans and cauliflower.
Peppers in Salads
Peppers, French dressing.
After draining some boiled peppers and cutting them into strips, place them in a small bowl, and pour over them a French dressing. This salad may be served with crackers as a course in a dinner, or be served with hot or cold meats.
Now are these ordinary cucumbers, or EEC reg cucumbers that need to be a certain length and circumference?
OR the cucumbers that were the kind to be found in our greenhouse during the Summer? Ordinary normal cucumbers. No particular length or circumerence.
Midge, you perky soul, I would guess that these cukes are the American type, meaning they have seeds and are much shorter, smoother and thicker than your Brit veggies.
The news about your pretty-vegetable regs being relaxed is encouraging. A curved carrot tastes the same as a perfect carrot...yes?
What is with the French dressing? I don't like French dressing. Why not Italian? Were we at war with them then? :)

Your lucky, The USA have only had a war with a few countrys, The Brits have had a war with just about everybody!!
Tiff, I looked for an Italian dressing, but all I found was a picture of Dom DeLuise trying to pull up his dance tights.
I'll keep looking.
