Recently I found a recipe for a slow-cooker (Crock-pot) breakfast. I'm not used to the idea of using a slow-cooker for breakfast, but I thought I'd give it a shot. I'm glad I did, and so is the rest of the family. Not only did this taste good, but waking up to the smell of baking apples and cinnamon is pretty nice. Especially if you, like us, have a baby... who is still in diapers...
The recipe is below. I doubled the recipe so we had leftovers for the next day. The leftovers reheated just fine when we nuked 'em (microwaved them).

Slow-cooker Breakfast Cobbler

4 medium-sized apples, peeled and sliced
1/4 C. honey
1 t. cinnamon
2 T. butter, melted
2 C. granola cereal
Spray inside of Slow-cooker with nonstick spray. Place apples in slow cooker and mix in remaining ingredients. Cover and cook on low 7-9 hours, or overnight (alternately, cook on high 2-3 hours). Serve with milk.
Makes 4 servings.
Suggestions:
- Use a solid apple. I used Cortlands, and they were pretty much disintegrated by morning. Great flavor, just not much actual apple was left. Perhaps a Granny Smith or other good baking apple.
- Try to stick to the shorter time on low, 7-8 hours. After 8 hours the edges of mine were getting pretty crispy.
- Make sure to spray the inside of the slow-cooker! It will help tremendously with cleanup.
- For a treat, top with a little whipped cream instead of milk.
